I miss ice cream. So much. Ice cream in Egypt tends to deliver on the ice part but fail at the cream part. It's icy, watery, sometimes gritty even. It lacks that lovely rich creamy texture you'd expect from something with the word cream in the title. A while back I bought a way overpriced ice cream maker at Carrefour. It stopped working after 4 uses. fail. When I saw this recipe for a 2 ingredient ice cream, no ice cream maker needed, my first thought was, "Suuure. That's gonna work great." I was wrong. very much so. This is the stuff of dreams. And so so simple too. Thank God these two ingredients are kinda pricey here, cause otherwise I'd just sit around eating this stuff all day.
So, what are these two ingredients you ask?
So, you whip the cream. With a whisk. With an immersion blender. With a kitchen aid mixer. Whatever.
Then you add in the condensed milk.
Stick it in a container and freeze overnight.
Eat. The end. Literally.
Now... that will taste like creamy condensed milk.. which is yummy.. but personally, I like to flavor mine. You could mix in some vanilla extract or a bean for vanilla ice cream or.. melted chocolate for chocolate ice cream.. or I've been known to crush in some Oreos(Borios for those of us in Egypt) for a nice fake cookies & cream. My favorite thing however, and if you're anything like me, you'll love to add in...
Instant Espresso Powder. Yes. Sooo good. The combination of the espresso with the slight condensed milk flavor makes the ice cream taste like cafe con leche. Or in other words, heaven in a bowl.
For this amount of ice cream I would use two of these packets, or about 2 teaspoons of any brand of instant espresso powder, dissolved in a bit of hot water. Then just mix that into your bowl of whipped cream and condensed milk before you freeze.
Now as amazing as that is.. Recently I got something lovely. A friend brought me this from the States.. You can pick it up on Amazon here.

Mint Chocolate Chip. You know, only my FAVORITE ice cream flavor ever.
This oil is strong. Like, it smells out the whole kitchen for the rest of the day strong. I like to use it since extracts have alcohol in them, and also with these, you just have to put in a couple drops. They last soo long.
To make it that authentic artificial green color I added:
Yes, this is food coloring. In powder form. Because I'm in Egypt. I got it from a store in the old souq in Minshaya called Halawani. I just asked for alwan beta3 tabeekh.
My mother actually saw this photo and pouted out the following, "Oh. It's a coloring. Now it's not healthy."
You know, cause ice cream without food coloring is super healthy. ha. I love my mom.
Anyways, the last thing I added was some grated chocolate. I used about one square off of a Swifax bar of baking chocolate. Any chocolate will work really.
Then you freeze over night... And you get:

2 Ingredient Ice Cream
1/2 liter(2 cups) container of heavy cream
1 can(397 grams, 14 oz) sweetened condensed milk
1.) In a medium bowl whip heavy cream till you get soft peaks. Which basically means it's fluffy and lovely. One time I skipped this step and it was STILL okay.
2.)Add the condensed milk and mix well. Pour the mixture into a plastic container(I like using empty nestle ice cream containers...you know, cause I have a sick sense of humor.)
3.)Freeze overnight or until it's solid.
If you want to flavor your ice cream, you can add in whatever you're using along with the condensed milk.
For example:
2 teaspoons of instant espresso powder mixed into 1/8 cup hot water
or
1 teaspoon of vanilla
or
1/4 cup melted chocolate( I would mix this into the condensed milk first, then wit the whipped cream)
or
1/2 cup crushed Oreos(Borios)
or
3 drops peppermint oil
1/4 cup grated chocolate..
for mint chocolate chip
or
some pureed fresh fruit would be nice
or
whatever you can think of.
I've also tried adding in 1/2 cup regular milk just to stretch it and make it a little less creamy and a little harder. It was delicious and I would recommend trying it out if you want..

ooooooh, we need to put that espresso ice cream between two chocolate chip cookies!! right? we could even saran wrap them and keep them in the freezer for "emergencies". ;)
